Magnolia cookbook is no ‘Fixer Upper’

Magnolia co-founder, star of “Fixer-Upper” and New York Times bestselling author Joanna Gaines brings a collection of recipes with her signature style in “Magnolia Table.”

With stories about her family and photos of her life around her farm, Gaines shares more than 135 recipes in this collection that is meant to inspire gathering together.

The recipes are divided into seven chapters: Breakfast, Lunch, Soups and Salads, Appetizers and Starters, Side Dishes, Dinner and Desserts.

Breakfast recipes include JoJo’s Biscuits, Garlic Cheese Grits, Vanilla Cake Donuts with Maple Glaze and Syrian Donuts.

Lunch recipes offer Curry Chicken Salad with Toasted Nuts, Gaines Brothers Burgers with Drip Jam, Flatbread Pizza with Prosciutto and New Potatoes and Sweet Pepper and Pancetta Frittata.

Soups and Salads offers recipes like Tortilla Soup, White Cheddar Bisque, Peach Caprese and Layered Arugula Salad with Pear Viniagrette.

Appetizers and Starters include Party Queso, Last-Minute Party Dip, Sheet Pan Nachos and White Bean Hummus.

Side Dishes have recipes for Roasted Asparagus with Red Wine Bearnaise Sauce, Becki’s Mac and Cheese, Green Beans Amandine and Potato Gratin Mini Stacks.

Dinner recipes include Sour Cream Chicken Enchiladas, Chicken Spaghetti, Fresh Spinach and Leek Risotto and Mom’s Bulgogi.

Desserts offer Dulce De Leche Apple Pie, Brownie Pie, Aunt Opal’s Banana Pudding and Buttermilk Blueberry Puff.

For dinner one night, I made Baked Chicken with Bacon Bottom and Wild Rice. The bottom and sides of the pan are covered with peppered bacon, then the rice and a soup-based filling is placed on top, and then topped with chicken tenders.

This was easy to make and the bacon infused a smoky and saltiness to the rice. My only problem was I used the size dish it said to and it overflowed in the oven and caused all sorts of problems (like smoke detectors going off.) So I would recommend putting a cookie sheet on the rack underneath this so you’re not making a mess.

Another night, my husband made Grilled Raspberry Chipotle Pork Tenderloin. The pork marinates in a sauce overnight, and then is basted a bit with the sauce again and then grilled. Everyone seemed to like it really well and the pork had a good flavor.
