Kiki’s Corner: Fall is here, but I could do without the rain

Fall is here, or should I say finally here? Not sure what I would rather have: the extremely hot days or the horrible rainstorms, thundering and floods, plus all the water damages that so many people had in their homes.
A few days ago, as we were driving through Athens, Ohio (not Athens, Greece, lol), we could see next to the highway a huge area by Ohio University that was flooded. All that used to be a soccer field for OU. Honestly, I don't mind rain, but when it rains every day, it is a bit much.
Something else that is not my favorite is getting dark early. At the same time, I feel for children that I see early in the morning waiting outside for the school bus to come and pick them up and I'm thinking, what happens when it rains and it's freezing cold or snows? At times, I feel like getting a bus and picking up children, lol. I guess we're never satisfied. And I'm sure when you are young, things like that don't bother you, but to me, it breaks my heart.
Something else came into my mind, so I want to sit with you and talk a little bit about life.
Life is not always easy. Sometimes we fail. Sometimes we try too hard, and sometimes our dreams seem too far away. When I see young kids, I think how we can make a better future for them. I think it's very important to build character, it matters more than anything else that we can do for them.
Reputation is only what people see on the outside, but character is who you are in the dark. Success might bring you money, but only a good heart and honest values earn real, lasting respect. How you can treat someone who can give you nothing in return tells the world exactly who you are. Your titles will be forgotten but your character will always be remembered.
And we can continue telling those young ones to never give up means to keep trying even when things are hard. Life is full of challenges. When you want to give up, remember why you started. Many times you're going to feel tired and disappointed, but don't let temporary problems stop you. Keep believing in yourself. Your hard work will pay off one day. Don't forget: Quitting makes things permanent. Keep going
Be strong, stay positive, and never give up. Great things take time, but they're always worth it. Your future is waiting for you. All that I'm writing is not really only for children. It is for high school and college students, young adults, and after they enter the working world, when they are looking for work of any profession, all that can be very helpful to them, and they will remember when they're ready to have their family and children
As an adult, we all know trust is the little thing that makes a big difference in life. In today's world, it is not easy to find. People in general, in every situation where they get hurt, they feel betrayed and slowly stop trusting others. Actually, the real beauty of trust is that it brings peace, makes life easier and fills it with positivity. Trust indeed makes life more beautiful for everyone. Trust is not about ignoring mistakes but about believing in the goodness of people. I will finish with something interesting
Don't forget, tell yourself, "I can do it."
Remember, every successful person started with a small step. Never lose hope. Mistakes and failures are part of learning, but you have to have a good attitude, keep working hard and never give up. On top of all that, we should believe in ourselves and always keep trying.
I thought I was finished, but I thought of something else that I want to share with you because it is very important.
We should respect our life and the lives of others. Good health and inner peace are true treasures of life that money cannot buy.
Life for sure is a precious gift that we get only once. It is full of opportunities to learn, grow and make a difference. Every moment of life has meaning, and it is in our hands to make it beautiful and worthwhile. So one thing we have to do is use our time wisely, help others and always choose the right path. Life is not about how long we live, but how well we live.

Enchilada bake
1 1/2 pounds ground beef
1 cup chopped onion
1 1/2 tsp ground cumin
1/2 tsp pepper
2 cloves garlic
4 tsp chili powder
1 1/2 tsp salt
2 cups taco sauce
12 flour tortillas
1 pound Monterey Jack or cheddar cheese
1 cup sour cream
Cook beef and onion on a medium heat until meat is brown. Drain and add cumin, garlic, chili powder, salt and pepper. Simmer 10 minutes uncovered. Meanwhile, pour 1/2 cup taco sauce into 9-by-13 casserole. Arrange half the tortillas to cover the sauce. Pour 1/2 cup additional taco sauce over tortillas. Spoon on beef mixture, top with sour cream and half the cheese. Spread remaining taco sauce over tortillas. Top with remaining cheese. May be prepared in advance if you like. Cover with foil and bake 40 minutes in an oven at 350. Remove foil and continue baking 5 minutes.

Mexican chicken
6 thighs
3-4 breasts, cooked and boned
Mix in blender:
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Ro-tel tomatoes
1 small can evaporated milk
1 pound mild cheddar cheese, grated
1 medium green pepper, chopped
1 medium onion, chopped
3 tbsp hot sauce
1 packet taco-flavored Doritos
Put in layers in this order
1. Taco chips
2. Chicken
3. Mixture
4. Cheese
Bake uncovered at 350 for about 40 minutes.
