Kiki’s Corner: Confidence, happiness and a positive mindset

Today I'm going to continue what I didn't finish about children in general on the parent page yesterday. Since all the kids have summer break from school, I think you should have them read everyday something that they enjoy, because reading is a valuable habit that improves knowledge and imagination and also improves concentration memory and creativity. A good reading habit makes students more confident and successful in their life and studies, and also opens the doors to endless opportunities and helps them to grow into wiser and responsible individuals.

Something else, that I think is very important is to teach them a positive mindset.

A positive mindset helps our children to face challenges with confidence, hope and determination. That way, with a positive attitude, they'll believe in themselves and never give up easily. Plus, with respect and understanding, they build stronger relationships from a young age.

Children along with adults need to practice the habit of gratitude that helps us appreciate the good things in life and being thankful for our family and friends. Gratitude also teaches us to value what we have instead of complaining about what we lack, and not to forget that opportunities bring happiness and peace.

A grateful heart lead to a happier, healthier, and more meaningful life. 

Another important factor is to teach them never to give up. They need to learn that life is filled with challenges and failures, but these difficulties help us learn valuable lessons and become stronger.

Every failure is an opportunity to improve and gain experience when we believe in ourselves. Since they focus on a dream, success becomes possible.

Kids need to be happy. Happiness makes every day brighter and more valuable. A happy person spreads kindness and creates a positive environment for others.

Helping others achieving goals and spending time with family and friends also bring happiness. Happiness does not depend only on money or material things. 

Something about me to share with you.

I enjoy reading, learning new skills and spending time with loved ones. I feel life is a journey filled with hope, and meaningful experiences. 

Nobody is perfect, but I try to become a better person by working hard, helping others and staying positive.

I value my family, my friends and try to be a better person and help others as much as I can. I enjoy learning new skills. I believe that honesty, patience and determination lead to success. Everybody should have dreams and my goal is to achieve my dreams, small or large. I tried to live a meaningful life with confidence and gratitude, and share my talents with others.

French chocolate mousse 

• 8  eggs

• 2 cups granulated sugar

• 8 ounces bitter sweet or semisweet chocolate

• 8 ounces unsweetened chocolate 

• 6 cups whipping cream 

Whip cream and refrigerate. Melt chocolate and cool. Blend eggs and sugar in mixer until pale yellow in color and smooth. Mix the cooled chocolate with eggs and sugar. 

Combine thoroughly, fold in by hand one cup of the whipped cream. Add this mixture back into remaining whipped cream and fold in by hand and chill . 

All butter pound cake

• 2 cups of butter, unsalted

• 2 cups powdered sugar

• 6 eggs, room temperature

• 3 cups of flour

• 1 tablespoon of vanilla

• 1 teaspoon salt

• Fresh lemon rind from one lemon 

Cream butter and powdered sugar, eggs, saltand vanilla.

Cream on a medium speed 3 to 4 minutes.

Add flour, blend 1 minute on low speed. Pour batter into well-greased Bundt cake or loaf cake pan.

Bake at 300 for one hour. Test with a pick before removing from oven. 

Cool for five minutes. Remove from pan, cool on wire rack . 

(This cake is best made a day ahead.) 

Curried pineapple and tuna salad 

• 1 pound water packed tuna, drained 

• 1 cup pineapple tidbits drained 

• 1 cup celery, fine diced 

• 1/4 cup cashew nuts, toasted 

• 3/4 cup mayonnaise

• 1/2 teaspoon dry mustard

• 1/2 teaspoon curry powder

Drain tuna well and break into large chunks. Drain pineapple well. Combine tuna, pineapple, celery, and cashew nuts.

Stir together mayonnaise, dry mustard and curry powder. Mix lightly with the tuna- pineapple mixture. Chill.
