Kiki’s Corner: Believe in yourself and your abilities

Before I start anything, I want to share with you that we're planning to have a great weekend. I'm extremely happy because as y'all know the 16th annual Easter parade is at 2 p.m. Saturday.

I'm sure you're tired of reading about it, but it is something that I take extra pride in, not only because of the people who participate in the parade, but also the whole Mid-Ohio Valley comes out to cheer all the groups. Participants include churches, schools, politicians, businesses, dogs, school groups, bands, and the list goes on and on.

So get ready, bring the whole family out, and enjoy the parade. Make sure the kids bring their Easter baskets along.

Then in the evening, go to the Actors Guild to see the Lip Sync Battle -- great entertainment with community involvement. If you have a sweet tooth, get a piece of my homemade baklava (it is finger licking good lol) .

On Sunday, don't forget the annual Wood County Society Telethon. I'll be live on air from 5:30 to 6:30 p.m. to take anyone's pledge. What a great way to help individuals and families in our community!

This past Tuesday, my husband Francis, our son George and I had the pleasure to meet the new owner of the Grand Central Mall, a very nice, incredible and intelligent young man. He shared with us what he is planning to do in the mall.

You will be impressed as much as we were. The remodeling will start soon.

Another thing I want to share with you is how important education is for adults, as much as it is for children. It's a powerful tool that, in the long run, changes lives and shapes the future.

Through education, people learn to think clearly and make wise decisions. It opens doors to better careers and opportunities. Education also teaches values, responsibility, and discipline. Education is one of the greatest strengths a person can have. You are never too old to get educated. In the long run, you will appreciate it.

When you enter the work world as an adult, it is very important to be honest, responsible and ethical, regardless of whether someone is watching you or not. All of us as adults, we have made mistakes in our personal and professional lives, but as long as we realize it and try to change things, that's the importance of it.

At times when shortcuts seem tempting, choose honesty over convenience. In the long run, you will be respected by other coworkers. And you do develop a strong character.

When you are in business, like I have been all my life, my responsibility is the key to personal growth and success. When you are an owner, you have to make your own decisions. I felt like I had to be honest, reliable and accountable in all aspects of life. My responsibility makes me focused and motivated. I have to make my own decisions that way; I need to have confidence in myself. I take every step daily very carefully.

When I started in business many, many years ago, we didn't have the internet. I'll have to say it is one of the greatest inventions of the modern world. It connects people and also we can learn skills, study online, do business and communicate easily. When you use it properly, the internet becomes a powerful tool for learning, growth and success in daily life.

When you are in the business world, you constantly need to keep improving your skills every day. Do not wait for approval, and believe in your own abilities. When you keep going despite difficulties, your results will speak for you. Success is the strongest proof of who you are and what you can achieve

Pineapple Casserole

1/4 pound butter, melted

5-6 slices white bread

1 tablespoon flour

1/2 cup of sugar

1/2 teaspoon salt

2 eggs, beaten

1 can (No.2) crushed pineapple

Combine melted butter and bread slices broken into small pieces. In another bowl, combine flour, sugar, salt, beaten eggs and pineapple.

Turn all ingredients in to buttered casserole dish. Refrigerate overnight or at least three hours.

Bake for 1 hour at 375 just before serving.

Pinto Beans

1 1/2 cup pinto beans

3 1/2 cups of water

1 1/2 teaspoon salt

1/4 teaspoon oregano

1/2 teaspoon basil

1/2 teaspoon cumin

1 1/4 tablespoon garlic powder

Sort and wash the beans. Put into water. Bring to a boil. Boil 2 minutes. Remove from heat. Cover and let set 1 hour. Return to boil, reduce heat to simmer, and cook 2 hours or until tender. Add seasonings and simmer 15 minutes or so.

Be sure beans are always covered with water

Baked Zucchini

4-5 zucchini

Oil to saute

1 can stewed tomatoes

Mozzarella cheese slices

Skin and slice them like a cucumber. Put a little oil in a pan and saute. Should turn colors and get soft. Put in pan and top with can of stewed tomatoes. Put slices of mozzarella cheese on top. Bake at 350 for a half an hour.
