Kiki’s Corner: Gratitude in the new year

Happy New Year!

I hope the New Year will bring health, happiness, success, and prosperity to all of you! We all know when we welcome the New Year each one of us hopes and wishes to be better than the last one and comes and brings us some good wishes!

What is the most important wish for you? Of course everyone has different wishes but I hope everything you wish comes and finds you in 2026!

One thing for sure we all wish for is "Peace on earth, good will to men."

We should count our blessings, but we should also make our blessings count.

Showing gratitude is one of the simplest yet most powerful things humans can do for each other.

When we give cheerfully and accept gratefully, everyone is blessed.

A grateful mind is a great mind which eventually attracts to itself great things. Whoever is happy, makes others happy. The most important thing is to enjoy your life -- to be happy -- it's all that matters.

With the New Year, here's some things money can't buy: happiness, peace, love, manners, respect, trust, character.

All of us, I'm sure, have new wishes for the new year. Some things we want to change, some things to continue as they are and some things we want to forget.

No one can read your mind so it's up to you to make things happen and improve yourself but for sure it needs motivation. Many have different ideas, dreams and goals and some don't do anything to change and that is fine. That is why I say everyone is so special because we are all also different. (You have heard that from me before.)

Sunday is already Jan. 4 and let's start with a good attitude and good will.

Life can be better, but don't forget life could be a lot worse as well so let's thank our lucky stars. Everyone has more things that we have at the same time, many have less so we should be happy with what we have.

Some good news. For the United Way one of my four trees decorated at the Blennerhassett Hotel (my Mickey and Minnie Mouse tree) on the night of the auction brought in $3,000! Hooray! I'm sure the buyer liked and loved Disney and Mickey and Minnie Mouse! It was the highest bid of all for the 50 to 60 trees that were displayed at the hotel. I was so happy that I could help out like that. That is what I like to do and help our community. I feel many families will benefit with that money and the help of the United Way!

Spare Ribs

2 pounds country style ribs

Wesson oil

Salt and pepper

1 onion, chopped

1 tablespoon vinegar

2 tablespoons brown sugar

2 teaspoons prepared mustard

2 (8 oz.) cans tomato sauce

Place meat in baking dish, Brush with oil, Sprinkle with salt and pepper. Bake 45 minutes at 375 degrees F, drain fat. Combine onion, vinegar, sugar and mustard and spread on meat, pour on tomato sauce. Bake at 350 degrees F for 30 minutes or until done, basting occasionally with sauce. Make six servings.

Orange Glazed Pork Chops

4 (3/4 inch thick) pork chops

Flour

Salt and pepper

1 tablespoon vegetable oil

1/2 cup orange juice

2 tablespoons orange marmalade

2 tablespoons brown sugar

1 tablespoon vinegar

Sprinkle pork chops lightly with salt and pepper, dredge in flour. Heat oil in a heavy skillet. Brown pork chops on both sides. Combine remaining ingredients, mixing well, pour over pork chops. Reduce heat, cover and simmer for 40 to 45 minutes. Serves 4.

Chicken Tetrazzini

8 ounces of spaghetti cooked

4 tablespoons of butter

1/2 pound fresh mushrooms

3 tablespoons flour

1 cup chicken broth

1/2 cup white wine

3/4 cup light cream

3 cups of diced chicken, cooked

1/2 cup Parmesan cheese

1/2 cup pimento

1/4 cup green pepper

Melt butter in skillet. Add mushrooms, green pepper, and pimento. Saute until tender. To these add flour and blend, add broth and cook until thickened. Remove from heat. Add wine and cream. Stir until well blended. Grease baking dish (3 quart) and layer as follows: spaghetti, chicken, sauce, repeat until all of the chicken and sauce is included, leave a little spaghetti to go on top, cheese to place on top of this. Bake at 400 degrees F for 30 minutes.
