How were your New Year’s resolutions? Are you still on them or are you done till next year, LOL?

I heard most of the people are done and down the drain after two to three weeks and some are lucky to keep them for a couple months.

You probably wonder why I didn’t write my article last week. Trust me it was hard not to write , but we were on a cruise. I was so busy with things to do and didn’t have enough time. First we flew to Orlando for a few days, went to different parks, Hollywood Studios, etc., then we went on a cruise with the third best cruise boat called Utopia, a huge place with all kinds of parties, shows and activities.

Let me mention some fun places in the boat: All-in signature production show, Youtopia Ice, adult comedy show, Aqua80too, name that tune, The Price is Right (Remember, that was on TV) and Love and Marriage (They used to be on TV and called the Dating Game.)

They had three pools with all kinds of activities, Party Mode on and Utopia railway party.

Then we went to Nassau Bahamas where shopping with royal is shopping with confidence. I did big damage with some great purchases I really wanted to help them out, LOL.

This island metropolis is only 215 miles away from Florida yet offers visitors diverse and unique experiences. Nassau is filled with rich history, inspiring art, magnificent shopping, delicious local flavors and world-class snorkeling and scuba diving all found only minutes away from the port.

Let me mention some of the stores that I visited that I was very impressed by. The island Post delivered you an experience not to be missed.

Next stop was the island named Coco Cay Private destination that takes adventure to a whole new level. There was Seaside Point, Harbor Beach, Oasis Lagoon and Breezy Bay at Chill Island/ There was Thrill Waterpark, Sandy Lane, and more things to do so now you know why I didn’t have time to write my article such as the wave pool, Daredevils Tower, a nature trail, hideout cabanas, slice of paradise and bar, kayaks, wave jet drivers . And not to mention the 24/7 buffet on the boat of all kinds of foods, drinks, salads, desserts and appetizers. I highly recommend Utopia cruise boat.

SPARKLING KIWI LEMONADE (recipe from the boat)

Medium kiwi, peeled, divided

3/4 cup sugar

3/4 cup lemon juice

1 liter carbonated water chilled

Slice two kiwi into small pieces..place in ice cube trays and fill with water. Freeze. Cut the remaining kiwi into large pieces, place in a food processor, cover, and process until smooth strain, discard pulp in a 2-quart pitcher, stir sugar and lemon juice until sugar is dissolved. Stir in the kiwi puree. Refrigerate until chilled. Just before serving, stir in carbonated water, and serve over kiwi ice cubes.

FRESH PEACH LEMONADE

4 cups of water divided

2 medium peaches, chopped

1 cup sugar

3/4 cup lemon juice

One medium lemon slices

Mint sprigs

In a small saucepan, bring 2 cups of water, peaches, and sugar to a boil. Reduce heat, cover and simmer for 5 to 7 minutes or until peaches are tender.Remove from the heat. Cool. Strain, discarding peach skins. In a large pitcher, combine peach mixture, lemon juice and remaining water. Add lemon slices and mint if desired. Serve over ice.
