Kiki’s Corner: As time goes by

Last week we once again experienced the daylight savings time change and continue to hear every year pro and con complaints.
Many people would like to see the time stay the same all year round with having more daylight in the evening after they finish work while others enjoy the getting dark around 5 pm but are able to wake up to daylight to start off their day.
In short, we must face it that whatever is decided that we will just have to go with the flow and not complain, which is not good for our blood pressure.
Regardless, life and time will continue regardless if it is day or night and if the time changes or not. Just accept the fact and adjust to whatever the final decision brings, keeping in mind that worrying about things will not change anything and is pointless.
Time moves slowly but passes quickly and is free but is priceless for sure and the secret is knowing how to use time for once you lose it it can not be returned. If you need time you need to plan it and not just think about it or keep putting it off because otherwise you will never get whatever you need done.
Take every day and pretend it is a bank account and time is our currency — no-one is rich and no one is poor and we each have 24 hours a day and should attempt to use them wisely. The negative aspect is that time seems to fly by even faster as we grow older whereas when we are younger we tend to think less about time. The positive aspect is that we are personally the pilot and have control of time and what we use it and therefore we must strive to use it constructively and to our advantage.
It is important to plan your time for each day presents a different situation that you must deal with to achieve your goal.
Not only does the time change but each of us personally change and to succeed we must be able to also change and adapt to the various situations that may arise.
Whatever — I wish everyone will enjoy everyday with good health and happiness regardless if they like or dislike the changing of time every year.

* Sunday, March 30, the West Virginia Symphony concert “Casual Classics” at the Blennerhassett Middle School at 2:30 p.m. Admission is free for all students.
* Tuesday April 8, Spring Easter Celebration followed by a 4,000 filled egg hunt sponsored by the Elks Lodge #198 (two bikes will also be given away) on the front campus of Parkersburg High School.
* Saturday, April 12, 15th annual Easter Parade, 2 p.m. in downtown Parkersburg.

MEATLESS ZUCCHINI LASAGNA
Two medium zucchini squash peeled and sliced
Salt and pepper
Thyme
2 tablespoons tomato sauce divided
1/2 cup cottage cheese
Grated Parmesan or Romano cheese
Cook zucchini in salted water to cover until tender. Drain in a small ovenproof casserole, place half the cooked zucchini, sprinkle with salt, pepper and a little thyme. Spoon over the squash 1 tablespoon tomato sauce and the cottage cheese. Repeat zucchini, seasonings and tomato sauce. Top with grated cheese. Bake uncovered at 350 degrees F for 20 minutes or until bubbling.

WHIPPED TURNIP PUFF
4 cups mashed cooked turnips
2 cups soft bread crumbs
1/2 cup butter melted
2 tablespoons sugar
2 teaspoons of salt
1/4 teaspoon pepper
4 eggs slightly beaten
Mix all ingredients together thoroughly. Spoon into a greased 1 1/2 quart casserole and brush the top with a little additional melted butter. Bake at 375 degrees F for 1 hour. Turnips may be prepared ahead, but do not freeze. Serves 8.
