Book Nook: ‘Best 100’ recipes from a century of Betty Crocker

Betty Crocker celebrates 100 years of recipes in their new cookbook, “Betty Crocker Best 100”.

With a look back through not only popular recipes, but also the brand and how “Betty” looked each decade, the cookbook celebrates everything that has made the brand popular with home cooks.

Recipes are divided into 5 chapters, and each chapter also has a short piece about the history of the Betty Crocker brand. There’s Favorite Quick Breads, Best Yeast Breads, Celebrated Main Dishes, Irresistible Cookies, Bars and Candies and Unmatched Desserts. These include recipes for such dishes as Gluten-Free Banana Bread Muffins, Bacon, Corn and Hashbrown Waffles, Cherry-Eggnog Cream Pastries, Gluten-Free Bagels, Roast Turkey with Fresh Thyme Rub and Maple Glaze, Slow-Cooker Barbecue Beef Short Ribs, Butter Pecan Pudding Cookies, Double Butterscotch Brownies, Cranberry-Molasses Cake with Sweet Butter Sauce and Buche Noel to name a few.

This would be a great cookbook to give new home cooks as this is a collection of their best recipes and will be a great starting point. There’s sure to be plenty to please a variety of palates!

I made Chocolate Lover’s Dream Cake one weekend when I was really wanting something chocolate-y. This Bundt cake uses a chocolate cake mix, chocolate milk, chocolate pudding, chocolate chips and has a chocolate glaze on top. If you are sad before you eat this, you won’t be after a piece! It is chocolate-y without being too sweet and everyone that tried a piece loved it and requested more.

CHOCOLATE LOVER’S DREAM CAKE

CAKE

1 box Betty Crocker Super Moist butter recipe chocolate cake mix

3/4 cup chocolate milk

1/3 cup butter, melted

3 eggs

1 container (8 oz) sour cream

1 package (4-serving size) chocolate fudge instant pudding and pie filling mix

1 bag (12 oz) semisweet chocolate chips (2 cups)

GLAZE

3/4 cup semisweet chocolate chips

3 tablespoons butter

3 tablespoons light corn syrup

1 1/2 teaspoons water

1. Heat oven to 350F. Grease 1 2-cup fluted tube cake pan with shortening; lightly flour.

2. In large bowl, mix all cake ingredients except chocolate chips until well blended (batter will be very thick). Stir in chocolate chips. Spoon into pan.

3. Bake 56 to 64 minutes or until top springs back when touched lightly in center. Cool in pan 10 minutes. Turn pan upside down onto cooling rack or heatproof serving plate; remove pan. Cool completely, about 2 hours.

4. In 1-quart saucepan, heat glaze ingredients over low heat, stirring frequently, until chocolate chips are melted and glaze is smooth. Drizzle over cake.

Betty’s Kitchen Tips: Measure the volume of your fluted tube cake pan using water to make sure it holds 12 cups. If pan is smaller than 12 cups, batter will overflow during baking.

For milder chocolate flavor, you can use milk chocolate chips instead of semisweet.
