Keto cookbooks for those on diet

While the Keto diet continues to be popular, there has been a new range of cookbooks out to aid those following it. Three more new ones have hit shelves recently.

For those couples doing the diet together is “The Keto For Two Cookbook” by Lindsay Boyers, CHNC (Adams Media, $16.99).

This books contains 100 recipes made for two people, and not a crowd, so you don’t have to downsize recipes or have a lot of leftovers.

Boyers is a holistic nutritionist and the author of several Keto cookbooks.

There are 10 chapters of recipes: Breakfasts, Soups and Salads, Appetizers and Snacks, Side Dishes, Chicken Main Dishes, Pork Main Dishes, Beef Main Dishes, Seafood and Fish Main Dishes, Vegetarian Main Dishes and Desserts.

Breakfasts has recipes for Peanut Butter Pancakes, Bacon Hash and Western Scrambled Eggs.

Soups and Salads has recipes like Creamy Broccoli Soup and Spinach and Tuna Salad.

Appetizers and Snacks has dishes such as Crab Rangoon Dip and Parmesan Vegetable Crisps.

Side Dishes includes recipes like Creamed Brussels Sprouts and Turnip Fries.

Chicken Main Dishes have dishes like Spicy Chicken and Avocado Casserole, Bacon-Wrapped Chicken and Creamy Chicken Zoodles.

Pork Main Dishes offer Ham and Cheese Casserole and Breadless BLT.

Beef Main Dishes include Cottage Pie and Bunless Bacon Burgers.

Seafood and Fish Main Dishes offer Smoked Salmon and Creme Fraiche Rollups and Crab Dynamite-Baked Avocados.

Vegetarian Main Dishes have Stuffed Portobello Mushrooms and Ricotta-Stuffed Eggplant.

Desserts end things with Chocolate Mug Cake and Pumpkin Donut Holes.

I tried making Zucchini Chicken Alfredo from the cookbook – finding already spiralized zucchini at the local grocery store. All that was left was making the alfredo sauce and the chicken! It didn’t exactly taste like alfredo to me, but it was still pretty good.

If those on the keto diet are looking for quick meals look no further than “Weeknight Keto” by Kristy Bernardo (Page Street Publishing, $21.99).

Bernardo, author of several Instant Pot (my favorite accessory!) cookbooks and founder of The Wicked Noodle, collects 75 low-carb dishes for after work dinners.

The recipes are divided into 7 chapters: Delicious 30-Minute Dinners, Classic Carb Favorites Made Keto, Light & Fresh Keto Dishes, One-Pot Meals, Scrumptious Soups & Salads, Tasty & Tempting Side Dishes and Sweet Keto Bites.

30-Minute Dinners includes recipes for Chimichurri Rib Eyes and Baked Garlic Shrimp.

Classic Carb Favorites offers Cajun Chicken Alfredo and Italian Sausage Burgers & Garlic Spinach.

Light & Fresh Keto Dishes offer Zucchini Noodle Lasagna and Mexican Chicken Cauliflower Rice Bowls.

One-Pot Meals has Oven-Baked Chicken Thighs & Roasted Cauliflowers and Cajun Shrimp & Cauliflower “Grits.”

Scrumptious Soups & Salads offers Chilled Avocado & Crab Soup and Steak Salad with Cilantro-Jalapeno Pesto.

Tasty & Tempting Side Dishes has recipes for Stuffed Zucchini with Goat Cheese & Marinara and Chipotle & Sausage Deviled Eggs.

Sweet Keto Bites ends with Chocolate Chip Cookies and Peanut Butter Pie Fat Bombs.

One evening I made Boursin Cheese & Bacon-Stuffed Chicken Breasts. This involved packing the cheese into small slits in the chicken, then wrapping bacon around the whole thing and baking it. My stepdaughter was amused that this was “diet” food, but everyone loved it and wanted more.

Home cooks can find what they are looking for in “Keto Comfort Foods” by Sam Dillard (Adams Media, $16.99).

Dillard, author of the food blog HeyKetoMama.com and of an air-fryer keto cookbook collects 100 comfort food inspired keto dishes.

The recipes are collected in 7 chapters: Keto Casseroles, Keto Soups, Stews and Chilis, Keto Pizzas, Keto “Rice” and “Pastas,” Keto Classic Comfort Dishes, Keto Comfort Sides and Keto Baked Goods and Sweets.

Keto Casseroles has home-baked favorites like Chicken Cordon Bleu Casserole and Quick Jalapeno Popper Casserole.

Keto Soups, Stews and Chilis has dishes like Three-Meat Chili and Taco Soup.

Keto Pizzas has recipes for Chicken Crust Taco Pizza and Spinach and Feta Pizza.

Keto “Rice” and “Pastas” uses veg in recipes like Baked Pesto Chicken Meatballs and Zoodles and Cilantro Lime Cauliflower Rice.

Keto Classic Comfort Dishes has recipes like Biscuits and Gravy and Pickle-Brined Crispy Chicken.

Keto Comfort Sides involve Zucchini Chips and Chorizo Queso.

I tried a casserole one evening with Philly Cheesesteak Casserole. This tasted just like a Philly cheesesteak, just on a plate. So if you like cheesesteak, you will like this.

Keto dieters will find plenty of variety with these cookbooks.
