Mediterranean cookbook for all
A new cookbook is out for those interested in the Mediterranean diet, or just in Mediterranean cooking with “The Mediterranean Family Table” (William Morrow, $29.99) by Angelo Acquista, M.D. with Laurie Anne Vandermolen.
This cookbook has 125 Mediterranean recipes and has a section specifically about the Mediterranean diet. There is also a section discussing what to eat at any age, tips on shopping and storing and cooking your products. The book then gets into the recipes which are divided into Breakfast and Lunch, Purees, Salads, Soups, Vegetables, Legumes, Pasta and Other Grains, Fish and Other Seafood, Poultry and Meat, On the Grill, Desserts and Dressing and Sauces. Each index also has dishes labeled that are good for babies, kids and seniors.
Breakfast and Lunch recipes include Ricotta Pancakes and Scrambled Eggs with Olive Oil and Cheese.
Salads include Healthy Coleslaw and Broiled Eggplant and Tomato Salad.
Soups offer Minestrone Soup Three Ways.
Vegetables have Roasted Broccoli with Parmigiano and Eggplant Carpaccio.
Legumes offer Bean Salad with Corn, Chickpeas and Basil.
Pasta and other Grains have Cavetelli with Roman Cauliflower and Linguine with Swordfish and Almonds.
Fish and other Seafood offers Red Snapper alla Palermitana and Mussels with Tomatoes.
Poultry and Meat has Lime-Marinated Chicken Thighs, Marinated Pork Tenderloin and Mama’s Meatballs with Pasta.

I made Salmon with Orange and Lemon one busy weeknight. I had my oldest prepare the salmon to marinate one afternoon so I could prepare it when I got home from work. All she had to do was sit the salmon in orange and lemon juice along with honey, olive oil and soy sauce. We had a bit of confusion with the soy sauce and she used teriyaki instead. It was still good, so no worries there. The fish then broils in the oven and you serve it with the cooked sauce over it. We served it with brown rice. It was delicious and everything got eaten!
