It's fall and now is the perfect time for apple recipes! With that in mind comes Amy Pennington's "Apples: From Harvest to Table."

I made Prosciutto-and-Apple-Wrapped Fish with Potato Crisps for the girls. I am thrilled to find that I can find fish recipes that they will eat and actually enjoy and this was one of them.
It was also very easy to make.
The chopped apple lay on the fish fillets and the prosciutto wrapped around it, and the potatoes cooked at the same time.
All of this was good, except for the fact that I do not have any ovenproof saute pans, which meant I had to use saute pans to start both the fish and the potatoes, and then transfer them both to baking dishes to finish in the oven.
Which means more dishes to clean up later. But the dish was a success, everyone enjoyed it, and that makes it a keeper!
