Kiki’s Corner: ‘Mother,’ this weekend’s magical word

Love and everything begins with “Motherhood!”

Sunday is the time to celebrate a person that means so much to us and brought us into this world. It is a person that we call her mother – mom – mama – manoula – mitera – and various other names that we call our mothers. Our mother is a person that not only deserves our love Sunday but every day of the year. A mother deserves our deepest love, help, admiration, attention and everything 365 days a year.

A good mother does everything in her power to raise her child that she will always love and be proud of.

With all this said – Sunday is our turn to show just how much we appreciate all she has done for us over the years.

Our mothers have done and sacrificed so much for us, raising us from childbirth which is not always an easy task, guiding, protecting, advising and showing them love that they can pass on to their child.

Always remember that a mother’s arms are more comforting and securing than anyone else’s and we are always there for our child.

When you become a mother you are never alone in your thoughts because a mother must think not only of herself but also for her children and family.

I have heard that it is difficult and not always easy to be a single parent where you have to work twice as hard with twice the stress but the positive side is that they receive twice the hugs and love.

A son or a daughter is God’s way of telling a mother “I thought you could use a lifelong friend” and it is up to you to give them all your support, affection, time and love which is the perfect and best gift you can give them.

We all have different ways of loving our friends and family but no one can compare a mother’s love for her children and I have found that being a mother is a great accomplishment and I am very proud of my three children and eight grandchildren.

Sadly my mother and mother-in-law have passed but they are constantly and remembered daily.

So on Sunday have a happy and wonderful “Mothers Day”!

CHOCOLATE CHIP KAHLUA CAKE

1 yellow cake mix

1 cup cooking oil

4 eggs

1 cup of milk

1 (3 3/4 ounce) package instant vanilla pudding

1 (6 ounce) packages semi-sweet or milk chocolate chips

1 (8 ounce) package semi sweet chocolate, grated

1/2 cup Kahlua

1/4 cup powdered sugar, as garnish

Combine first five ingredients. Mix well. Stir in chocolate chips and all but 1/4 cup grated chocolate. Pour into greased and floured Bundt pan. Bake at 350 degrees F for 45 to 55 minutes. Poke holes in cake while cooling in pan. Drizzle the Kahlua into the holes. Remove cake from pan. Sprinkle with powdered sugar and reserved grated chocolate.

MOTHER’S BLACKBERRY CAKE

2 cups sugar

1 1/2 cup butter

6 eggs, separated

2 teaspoons baking powder

3 cups flour

2 teaspoons soda

2 teaspoons cinnamon

2 teaspoons nutmeg

1 teaspoon cloves

1 cup, buttermilk

1 cup fresh blackberries

Cream, butter and sugar, add egg yolks, beating well after its addition. In a separate bowl, combine next six ingredients. Stir in buttermilk and blackberries. Add to creamed mixture. Mix well. Beat egg whites until they form soft picks. Fold into batter. Pour into three 9-inch greased and floured cake pans. Bake at 350 degrees F for 35 to 40 minutes or until brown and springy to the touch, cool and frost.

ICING

1/2 butter

1 cup brown sugar

2 tablespoons milk

1 (16 ounce) box powdered sugar

Bring butter, brown sugar, and milk to a boil, remove from heat. Stir in powdered sugar. Add more milk if necessary to make the correct consistency for icing. Ice cooled cake.

GRANDMOTHER’S COCONUT CAKE

1 cup butter, softened

3 cups sugar

4 cups flour

2 heaping teaspoons baking powder

1 cup milk

4 eggs, well beaten

1 fresh coconut, grated

Cream butter and sugar until light. Sift flour with baking powder. Add eggs and grated coconut. Pour into well greased and floured tube pan. Bake at 350 degrees F for 1 hour. For even better flavor, bake one day ahead. Freezes well if tightly wrapped.
