What the world needs now

As we all know we all are living in a very different and difficult times. Not only the COVID-19 virus but also I never thought we would ever see and hear daily what is taking place here and all over the world. If our friends and relatives who have passed could see what is happening they would refuse to believe it. I always thought that hopefully things would get easier and better as we grow older but that does not seem to be true today.

Unfortunately crime has gotten out of hand and control to the point where many, especially in big cities, are afraid to leave their homes and sadly there seems to be very little effort on many of our government leaders to try to correct the situation.

On top of everything else is the terrible weather and especially floods in Kentucky that have taken so many lives and has left so much destruction.

Thousands of acres and homes are being destroyed by fires especially out west and the list goes on and on. (I think God is trying to tell us all something ?)

It seems as if we have lost a lot of our values and respect in general … What we need in life is :

* LOVE — we need to love each other and practice forgiveness.

* ENCOURAGEMENT — A very important word we need to use in our vocabulary often to help others .

* SUPPORT — Help and support others with their various needs according to your ability.

* HOPE — We all need hope and faith for the future.

* PEACE — We all need to pray and hope for peace and tranquillity in not only our country but the world.

By people practicing the above five words it will greatly help make the world a better place for everyone.

During these times we need to support and help various organizations like school food pantries, church pantries and meals for the elderly. Help people with their needs for food, clothing, utilities who are having a difficult time at the present.

I am not talking about the people that line Garfield Avenue and Ohio Avenue who sit in chairs smoking cigarettes and drinking pop waiting for donations plus leaving trash on the ground when they leave — especially when there are ” HELP WANTED” and “NOW HIRING” signs in any direction you look.

I have seen people offer them food but they refuse it and ask for money, I wonder ‘Why?”

Lets all continue to pray for our country!

2 cups ladies peas

2 cups cream peas

2 teaspoons salt, divided

2 cups fresh corn kernels (approximately 3 ears)

1 cup diced red bell pepper

1/2 cup chopped green onion

2 tablespoons chopped fresh basil

3 tablespoons fresh lemon juice

1/2 cup olive oil

1/4 teaspoon ground black pepper

In a large pot of boiling water, combine peas and 1 teaspoon salt and cook until just tender, 12 to 15 minutes. Drain and rinse until cooled completely. In a medium bowl, combine peas, corn, bell peppers, onion, basil, lemon juice, olive oil, black pepper and remaining 1 teaspoon of salt, teasing gently to coat. Yields 8 servings.



4 ears fresh corn, shucked and silked

1 (1-pint) container cherry or grape tomatoes, quartered

1/2 cup chopped fresh basil leaves

1/3 cup diced red onion

1/4 cup chopped fresh parsley

4 ounces crumbled feta cheese

2 tablespoons red-wine vinegar

1/4 cup extra-virgin olive oil

salt to taste

freshly ground black pepper to taste

In a large stock pot, bring water a boil over high heat. Cook corn in boiling water until just tender, 5 to 7 minutes. Cool slightly. Cut kernels from cob and place in a medium bowl. Discard cobs. Add tomatoes, basil, onion, parsley, feta cheese, vinegar and oil. Toss to combine. Season to taste with salt and freshly ground black pepper. Yields 8 servings.



2 pounds fresh green beans, trimmed

1/2 cup thinly sliced red onion

1 (6-ounce) can large pitted black olives, drained and halved

1 pint cherry tomatoes, halved

1/2 cup olive oil

1/2 cup red-wine vinegar

2 teaspoons Greek seasoning

1/2 cup crumbled feta cheese

In a large saucepan, cover beans with water. Bring to a boil over high heat and cook until crisp tender, approximately 5 minutes. Remove beans from boiling water and plunge beans into ice water to stop the cooking process, drain. In a large bowl, combine beans, onions, olives, vinegar and Greek seasoning. Pour oil mixture over bean mixture. Cover and refrigerate for 4 hours. Sprinkle feta cheese over salad before serving. Yields 8 servings.
