Popular chef marks birthday with book

A popular chef and cookbook teacher’s new book invites you into his home in “Jacques Pepin: Heart and Soul in the Kitchen” (Houghton Mifflin Harcourt, $35.)

Released in celebration of his 80th birthday and the airing of his final PBS show, Pepin offers 200 recipes that are French inspired and offers his classic technique.

The recipes are divided into Hors d’Oeuvres, Soups and Salads, Eggs, Cheese and Bread, Fish and Seafood, Poultry and Meat, Organ Meats, Rice and Pasta, Vegetables, Fruit Desserts and Preserves and Cakes, Cookies, Custards and Chocolate.

Hors d’Oeuvres offer starters like Cannellini Bean Dip, Tomato Tartine and Tuna Mascarpone Cream.

Soups and Salads have recipes such as Hanoi Chicken Soup, Cucumber, Onion and Mint Salad and Avocado, Tomato and Crab Salad.

Eggs, Cheese and Bread recipes include Herbed Omelet with Shrimp, Ricotta Quenelles and Pain Farci.

Fish and Seafood offers dishes like Steamed Fish with Provencal Vegetable Stew and Mussels with Cream and Chives on Soft Polenta.

Poultry and Meat recipes offer Chicken Jardiniere, Hamburger Royale and Spicy Lamb Ribs.
