Cooking for two just got easier with "One Pan, Two Plates" by Carla Snyder with photographs by Jody Horton.
Snyder delivers fresh and fast, one pot/pan meals that will serve two. With more than 70 recipes to choose from, there's plenty of variety for the empty nesters, just starting out couples, or the singles who would like a bit of leftovers.
The book is divided into four chapters: The Carbohydrate Cure, Hungry for More, Poultry With Soul and Angling for More.

I made quick Cuban Sandwiches one night for the oldest and myself for dinner. Using hoagie rolls, deli ham, deli roast pork, swiss cheese, mustard and pickles, this was a quick, warm sandwich to put together but was very filling and satisfying.
It was much better than the usual deli lunchmeat sandwich, thanks to the roast pork, but everything came together quickly too.
