Breakfast for dinner or "brinner" is a popular choice for many people. Lindsay Landis and Taylor Hackbarth devote an entire book to the subject with their new cookbook, "Breakfast for Dinner."
The authors discuss in their introduction that they tried to give typical breakfast dishes a fresh new twist. They even take certain dishes that one might think of as a dinner entree only and twist it into a breakfast item.
The book is divided into several chapters, Main Dishes, Sides & Starters and Drinks & Desserts. Dessers for breakfast/dinner? Why not!
Main dishes offer a lot of variety with dishes like Steak & Eggs Benedict, Italian-Style French Toast, Frittata Florentine, Andouille Shrimp & Grits, Bacon Fried Rice, Huevos Rancheros Tacos, Green Pea Carbonara, Polenta Cakes with Shiitake Mushrooms, Pizza Over Easy, Sunny-Side-Up Burgers, Chicken & Biscuit Waffles and Breakfast Sausage Ravioli.
Sides & Starters include fun dishes to have alongside your main course like Nova Lox Bruschetta, Parmesan Beignets, Habanero-Cheddar Bread Pudding, Moroccan Chicken Cinnamon Rolls, Espresso Baked Beans, Mini Zucchini & Pesto Quiches and Bloody Mary Tomato Soup.
Drinks & Desserts offer sweets and sips like Maple Bacon Cupcakes, Grapefruit Herb Sodas, Bacon Old-Fashioneds, Frozen Sunrise Margaritas, White Chocolate & Blueberry Tart, Chocolate Brownie Waffles with Blackberry Sauce, Vietnamese Iced-Coffee Pops, Earl Grey Panna Cotta and Doughnut Fudge Sundaes.
I love banana bread so I made Banana Bread Bundt Cake.
This takes your classic bread recipe and amps it up into a gorgeous, snackable cake.
The inclusion of chocolate chips in the batter adds a little something extra and this is a cake that stayed moist for days.
The recipe originally called for making a glaze of chocolate and peanut butter, but while getting the cake out of the pan (and accidentally losing part of it IN the pan) I discovered it tasted just fine without it and thought the glaze would make the whole thing overly sweet. The girls, who are usually not a huge fan of banana bread, ate this snack cake up!
For everyone who loves breakfast food no matter what time of the day, this is the cookbook for you!
"Breakfast for Dinner" is published by Quirk. It is $19.95.
