The girls and I had an appetizers for dinner night and made the Ricotta and Proscuitto Pies. These simple appetizers bake in mini-muffin cups and are proscuitto with a ricotta cheese filling, topped with a cherry tomato. The cheesy filling had a good taste and the proscuitto made it extra savory. I enjoyed this one-bite appetizer, but it must be for a more grown-up palate, as the girls weren't as thrilled with it. But I was pleased by both the taste and the visual aspect and it would make a great holiday appetizer.
This is a great book to have on hand for holiday entertaining that gives great dishes that are prepared simply with few ingredients and taste great!
