Game is dishes like Duck Pastrami, Venison and Dried Cherry Sausage, Spicy Wild Boar Sausage with Cilantro and Lime, Pheasant Chili, Austin Style and more.
Finally, enjoy all of these meat dishes with Sides like Tomato Salad with Red Onion and Dill, Grilled-Corn Salad, Spicy Fried Potatoes, Soft Polenta with Aged Cheddar and more.
I ended up making Bucatini with Bacon and Tomatoes one evening. You are supposed to use Jalapeno for more of a kick, but knowing the girls they wouldn't eat it, so I didn't use it. The bacon adds a smokiness to the simple tomato sauce and the bucatini pasta went really well with it.
For the meat-lover who wants a book that is just straight up meat, this is one for you.
"Michael Symon's Carnivore" is published by Clarkson Potter. It is $25.
