Weeknight dinners for your family

Don't know what to make for dinner? Why not try a recipe from "Betty Crocker: The Big Book of Weeknight Dinners."

With more than 200 quick recipes to choose from, getting dinner on the table has never been easier and more tasty than grabbing some takeout!

The book is divided into five chapters, Hearty Supper Sandwiches and Pizzas; Soups, Chilies and Stews; Simple Skillet Meals; Satisfying Casseroles and Main Dish Salads.

Hearty Supper Sandwiches and Pizzas has plenty to choose from like Buffalo Chicken Sandwiches, Turkey Salad Sandwiches, Peppered Pork Pitas with Garlic Spread, Hearty Bacon-Steak Sandwiches, Salsa-Shrimp Tacos and more. Pizzas vary from Chicken Sausage, Spinach and Swiss Pizza; Loaded Baked Potato Pizza; and Ham and Gorgonzola Pizza!

Soups, Chilies and Stews range from Buffalo Chicken Chili, Chipotle Turkey Chili, Taco-Corn Chili and more to After-Work Chicken Noodle Soup, Chicken and Barley Soup, Curried Sweet Potato, Lentil and Chicken Soup, to Beef 'n Veggie Soup with Mozzarella.

Simple Skillet Meals range from Bow-Ties with Chicken and Asparagus, Easy Chicken with Tomatoes and Spinach, Cajun Turkey Burger Skillet, Ginger Pork and Snow Peas and Beef and Kasha Mexicana.

Satisfying Casseroles are such recipes as Baked Chicken Panzanella, Chicken and Broccoli Quiche, Layered Chicken-Black Bean Enchiladas, Onion-Topped Turkey Divan and Ham and Cheese Ziti.

Main Dish Salads has a variety for hot days like Balsamic-Mozzarella-Chicken Salad, Curry Chicken and Summer Fruit Salad, Turkey-Chutney Pasta Salad, Roasted Pepper and Pepperoni Tossed Salad, Ground Beef Fajita Taco Salad and Cinnamon-Maple Glazed Salmon Salad.

I decided to try out Pizza Joes one day. Much like a sloppy joe, the pizza joe uses ground hamburger to make a kind-of loose meat sandwich with a bit of onion and pepper for spice and pizza sauce as the main flavor. Some mozzarella cheese added before serving makes this sandwich even more like a pizza.

The oldest and I enjoyed this quick treat that brought pizza flavor to hamburgers, the yougest wasn't as sure about it. But the recipe made plenty for leftovers the next day!
