Instant-Pot Chunky Beef Soup

The popular “Hungry Girl” brand by Lisa Lillien has released a new cookbook, “Hungry Girl Simply 6.” This book focuses on the healthier dishes, this time with all-natural recipes with 6 ingredients or less.

In her 13th cookbook, Lillien says in the introduction that she wanted to create easy and delicious recipes and didn’t want to use weird ingredients or have complicated instructions. She further says that revery recipe in the book is less than 375 calories a serving and more than half of the recipes are 30 minutes or less to prepare. There are also 95 gluten-free recipes and 91 vegetarian recipes.

The recipes are divided into 9 chapters, though there are also recipe list guides that tell which are no-cook, which are 15 minutes or less, 30 minutes or less, vegetarian, gluten-free and which ones use a sheet pan, which are single serving, which are family size, which are for the slow cooker, which are for my favorite utensil The Instant Pot, and which are chocolate, peanut butter of blended batter recipes. The chapters are: Simply Eggs, Simply Oats, Simply Chicken, Simply Beef (& Pork), Simply Seafood, Simply Veggie, Simply Dough, Simply Fruit and Simply More Sweets. There is also a section for Simply Simple Tips and Tricks.

Simply Eggs includes recipes for Chicken Sausage Egg Mug, Easy Freezy Breakfast Sandwiches, Muffin-Pan Eggs Bene-chick and more.

Simply Oats includes dishes like Simple Overnight Oats, PB-Nana Blender Pancakes, Apple Spice Blender Muffins and Banana Nut Blender Breakfast Cookies.

Simply Chicken includes recipes for Instant-Pot Simple Shredded Chicken, EZ Faux-Fried Chicken Strips, Spaghetti Squash Chicken Tetrazzini and Chicken Pot Pie Stir-Fry.

Simply Beef (& Pork) offers up dishes like Simple Shepherd’s Pie, Eggplant Lasagna, Asian-Style Mini Meatloaves and Retro Pork Chops & Apples.

Simply Seafood includes recipes for Blackened Shrimp Enchiladas, Thai Oh My Salmon & Broccoli, Tropical Fish Tacos and Skillet Jambalaya.

Simply Veggie includes dishes such as Sheet-Pan Ratatouille, Butternut Veggie Burgers, Three-Cheese Spaghetti Squash, Cheesy Faux-sotto and Veggie Pizza-dilla.

Simply Dough includes dishes such as Everything Bagel Bites, Cheesy Breadsticks and Bean & Cheese Empanadas.

Simply Fruit offers Upside-Down Slow-Cooker Apple Pie, Blueberry Blintzadilla, Cheesecake Stuffed Strawberries and Cookies & Cream Banana Bites.

Simply More Sweets finishes things with Cannoli Crunchers, PB Surprise Cookies, Freezy Crustless Cheesecake and Double Chocolate Brownies.

One night for dinner I made Instant-Pot Chunky Beef Soup. I love any opportunity to try out my Instant Pot. This dish used chuck roast, beef broth, carrots, mushrooms, onions and potato with some seasonings and cooked pretty quickly. It was a good, quick meal that came together nicely and was a no-fuss recipe for me and the family.
