Show hosts release cookbook

Gabriele Corcos and Debi Mazar, the hosts of the Cooking Channel’s “Extra Virgin” have released a cookbook by the same name.

This cookbook is chock full of Tuscan recipes from both hosts’ families as well as ones they were inspired to create. There is also a section on Tuscan essentials to have on hand in the pantry and helpful cooking utensils.

The rest of the book is divided into 12 chapters: Appetizers, Pastas and Sauces, Risotto, Soups, Salads, Meat, Fish, Vegetables, Pizza, Panini, Desserts and Drinks. And each chapter and many recipes are accompanied by gorgeous photos that will definitely whet your appetite!

Appetizer recipes include Heirloom Tomato and Burrata Caprese, Grilled Asparagus Wrapped with Lardo and White Bean and Pancetta Bruschetta.

Pastas and Sauces include Handmade Pappardelle, “Fake” Sauce, Lasagne Alla Bolognese and Baked Pasta in Eggplant.

Risottos include Sausage and Asparagus Risotto, Shrimp and Zucchini Risotto and Risotto with Melon and Speck.

Soups offer Pasta and Bean Soup, Cold Vegetable Soup with Mint and Spicy Mussel Soup with Grilled Bread.

Salads include Butter Lettuce and Pomegranate Seed Salad, Smoked Salmon Trout and Cucumber Salad and Octopus Salad.

Meat recipes include Super Tuscan Burger, Pork Chop with Tuscan Kale and Hunter’s Chicken.

Fish recipes offer Fish Tacos, Livorno-Style Mixed Fish Stew and Cod Florentine-Style.

Vegetables offers side dishes like Sauteed Dandelion Greens with Garlic, Fried Artichokes and Oven-Roasted Potatoes.

Pizza recipes include a basic dough and then Tomato, Anchovy and Caper Pizza, Buffalo Mozzerella and Basil Pizza and Raw Beef Pizza.

Paninis offer a bread starter, a recipe for Tuscan bread and then Speck, Pecorino and Grilled Eggplant Sandwich and Prosciutto and Taleggio Sandwich with Fig Preserves.

Desserts include Chestnut Flour Cake, Carnival Rice Fritters, Coffee Granita and Tiramisu.

Drink recipes include Limoncello, Caipirinha and Aperol Spritz.

Those serious about Italian cooking and wanting to try a bit more challenging recipes should definitely check this one out.
