Healthy weeknight dishes to enjoy

Ellie Krieger recently released a new cookbook that will get a healthy dinner to the table in 30 minutes or less with “Weeknight Wonders.”

Krieger admits in her introduction that on a busy night, it can be easier to choose takeout or microwave food rather than cook something, but she shows that fixing food means smarter portions and fewer calories. With 150 recipes that are quick fixes, she hopes to make choosing to cook an easier and healthier choice.

The recipes are divided into Salads, Soups and Sandwiches, Meat Dishes, Poultry Dishes, Seafood Dishes, Vegetarian Dishes, Sides and Desserts.

Salads includes recipes for both starters and side salads and main-course salads. There is Indian-Style Cucumber Salad, Mozzarella, Tomato and Peach Salad and Spinach Salad with Mushrooms and Red Onion for sides or starters and main-courses like Steak Au Poivre Salad, Ceviche Salad with Avocado and Grapefruit and Grilled Greek Salad with Chicken.

Soups and Sandwiches include recipes for Creamy Asparagus Soup, Shotgun Wedding Soup and Pasta Fagioli with Zucchini, as well as Cariibean Chickpea Curry Wraps, All-American Veggie Burgers and Mushroom Sloppy Joes.

Meat Dishes include recipes for beef, pork and lamb dishes. Beef includes Rush-Hour Chili and Chipotle Beef-Stuffed Portobello Mushrooms. Pork includes Pork Chops with Pears in Port Wine Sauce and Black-Eyed Peas, Greens, Eggs and Ham. Lamb includes Lamb Kabobs with Pomegranate Sauce and Grilled Lamb Patties with Herb Sauce.

Poultry Dishes include Parmesan-Crusted Chicken Breasts, Moroccan-Style Chicken with Lemon, Fennel and Olives and Thanksgiving Skillet Dinner.

Seafood Dishes include recipes for Shellfish and Fish. Shellfish dishes are Shrimp with Spinach, Garlic and Smoked Paprika and Scallops with Warm Citrus Sauce. Fish recipes include Cod with Miso-Ginger Broth, Pasta with Sardines and Broccoli Rabe and Trout with Artichoke Caponata.

Vegetarian Dishes include Broccoli Pesto, Tomato and Goat Cheese Pizza, Ravioli with Savory Pumpkin Sauce and Sweet Potato and Edamame Hash and Eggs.

Side dishes have variety like Orange-Balsamic Green Beans with Basil, Mulled Cider Sweet Potatoes and Lemon-Thyme Orzo Pilaf.

Desserts include Double-Chocolate Waffles a la Mode, Orange-Honey Glazed Berries and Caramel Popcorn-Peanut Balls.

I made Colombian Chicken Soup with Corn, Potatoes and Plantains for dinner one cold night. This Cuban-inspired stew has potatoes, carrots, corn, tomatoes and of course, plantains (if you can find them.) I could NOT find plantains locally, much to my dismay, so I ended up having to use bananas, which is not really the same at all. It was a warm and filling soup. I was supposed to put cilantro on it, but thought I had some at home and didn’t, so I thought it was a bit light on spicy flavor. Maybe the missing cilantro would have helped, but next time I think I’d put a bit more kick in it.
