Cookbook gets dinner to table by 6

Weeknight meals can be the most hectic, and Southern Living has just came up with a new way to help! The new cookbook, “Six o’Clock Solutions: 30-Minute Meal Plans for Delicious Weeknight Meals.” can be a busy parent’s new best friend!

The book is divided into eight chapters, with plenty of colorful photos and a grocery guide on each page.

Weeknight Dinner Playbook is several pages on stocking your pantry and refrigerator and menu ideas.

Superfast Suppers offers quick fix ideas like Grilled Flank Steak Fajitas, Bacon Cheeseburger Pizza, Chicken Marsala, Greek Salsa Salad with Grouper and Tomato-Basil Bisque.

Soup, Salad and Sandwiches offer takeout ideas that you make at home like Taco Soup, Asian Beef Salad, Slaw Reubens and Fried Green Tomato Sliders.

Company’s Coming are special-occasion dishes like Italian Meatballs, Peach and Pork Kabobs, Chicken Cobbler Casserole, Shrimp Succotash and more.

I made Skillet Shepherd’s Pie for dinner one night and it was a definite success.

Using hamburger, adding frozen vegetables, some seasonings and broth and then store-bought refrigerated mashed potatoes at the end, this was meal that came together in about 20 minutes, in one pan, which meant clean-up was a breeze. And the girls and I really enjoyed it.
