My girls love cannolis, but I don’t love the calories, so we made Frozen Cannoli Sandwiches, a cross between an ice cream sandwich and a cannoli, which was even better since my oldest has a milk allergy and can’t have a lot of ice cream. These treats use graham crackers as the sandwich part with a filling of sugar-free vanilla pudding, ricotta cheese, cool whip free, sugars and vanilla and chocolate chips. The filling freezes up into something that tastes pretty much like ice cream and the individually wrapped treats store in the freezer for a quick treat anytime.

The book says it makes 8 servings at 137 calories, but I made my filling stretch to make 12 servings easily. The girls and I loved these and they were a lot better for us than storebought ice cream sandwiches or cannoli.
